These tasty little parcels are perfect for a starter or hors d’oeuvres. Simple, easy and tasty. I created this dish from leftover filling and pastry. Serve with dips of your choice!
•large bunch of fresh flat leaf parsley
•large bunch of fresh Basil
•3 cloves of Garlic
•12 jarred sun dried tomatoes in oil
•3 cloves of garlic
•zest of one lemon
•150g Feta Cheese
•pack of filo pastry
Add all the ingredients to your food processor except the feta cheese. Whiz until a smooth paste, add some more oil from your sun dried tomatoes if necessary. Transfer to a bowl and crumble in the feta cheese then give a stir.
Open your packet of filo pastry and cut into four sections , (making them into four squares) each parcel requires four filo sheets so take four sheets and place on your work surface. Using the oil from your jar of sun dried tomatoes brush the top filo layer , get a good spoonful of mixture and place in centre, bring each corner of pastry to the centre to make a parcel and repeat until all four sheets are done, brush the parcel with a little oil from the jar of sun dried tomatoes and place on a baking tray, repeat until all mixture is used.
Now bake in oven until golden brown (15-20 mins)
I bake at Temp 180c (fan assisted)
