- 100g/3½oz unsalted butter
- 250g/8¾oz digestive biscuits (crushed). You can use Oreos for base if you prefer.
- 25 Oreo cookies, plus extra for garnish
- 450g cream cheese
- 1 1/2 cups icing sugar
- 1 1/4 cup heavy whipping cream (optional) extra for decoration
- Gently melt the butter in a saucepan. Add the crushed biscuits and mix until the butter has been absorbed.
- Remove from the heat and, while still warm, press the mixture (using the back of a spoon) into the bottom of a lined 23cm/9inch springform or flan tin. Leave to set for one hour in the fridge.
- In a large bowl, beat cream cheese with an electric mixer until smooth. Add icing sugar and beat until combined.
- Add cream, beat on low until incorporated, then beat on high speed until thickened and fluffy, add more cream if necessary.
- crush your Oreo biscuits then Fold in to your cream cheese mixture
- Take your biscuit base out of fridge and spoon in your Oreo mixture making sure you press down in edges and even all over.
- Chill in fridge for 2-3hrs
- Take out and decorate, I pipe cream at edges and finish with Oreo biscuits
- Now it’s ready to serve, enjoy!
