Oreo no bake Cheesecakes

  • 100g/3½oz unsalted butter
  •  250g/8¾oz digestive biscuits (crushed). You can use Oreos for base if you prefer.
  • 25 Oreo cookies, plus extra for garnish 
  • 450g cream cheese
  • 1 1/2 cups icing sugar
  • 1 1/4 cup heavy whipping cream (optional) extra for decoration 
  1. Gently melt the butter in a saucepan. Add the crushed biscuits and mix until the butter has been absorbed.
  2. Remove from the heat and, while still warm, press the mixture (using the back of a spoon) into the bottom of a lined 23cm/9inch springform or flan tin. Leave to set for one hour in the fridge.
  3. In a large bowl, beat cream cheese with an electric mixer until smooth. Add icing sugar and beat until combined. 
  4. Add cream, beat on low until incorporated, then beat on high speed until thickened and fluffy, add more cream if necessary. 
  5. crush your Oreo biscuits then Fold in to your cream cheese mixture
  6. Take your biscuit base out of fridge and spoon in your Oreo mixture making sure you press down in edges and even all over.
  7. Chill in fridge for 2-3hrs
  8. Take out and decorate, I pipe cream at edges and finish with Oreo biscuits 
  9. Now it’s ready to serve, enjoy!
